Wire Works Heritage Chevallier
Wire Works Heritage Chevallier is the very first non-peated single malt release from White Peak Distillery. Chevalier is a heritage barley variety that was dominant in England from the 1820’s to 1920’s.
Superceeded in the modern pursuit of yield, Chevallier has a unique flavour profile that we wanted to explore in our early years of distilling; robust maltiness with a rich marmalade character. The initial new
make was amazing and after years in ex-bourbon barrels we’re excited to offer one of the first, contemporary era whiskies made from Chevallier malt.
TASTING NOTES
Overview: Rich and sweet, herbaceous, biscuity, grassy and spicy, with an indulgent creamy texture.
Nose: Baked vanilla cheesecake, rhubarb and custard, fruit salad sweets, strawberry laces, wood glue, watermelon, apple pie.
Palate: White chocolate, cassia, celery, vanilla extract, kashmiri chilli, tamarind, rose, malted milk biscuits, hay, oolong tea.
Finish: Delicate liquorice, baking spices, fresh cut grass, icing sugar.
