An "undisclosed Speyside (M)" from Signatory is one of those open secrets serious collectors chase — the (M) designation is widely understood among enthusiasts to point to Macallan, bottled independently rather than under that famous name. Eighteen years in first-fill Oloroso sherry, at a robust 57.1%, this is about as close as you'll get to Macallan-calibre sherry maturation without the Macallan price tag.
THE BOTTLER: SIGNATORY VINTAGE
Founded in 1988 by Andrew Symington, Signatory is one of Scotland's most respected independent bottlers — the name taken from the tradition of having each cask signed by an esteemed figure as a mark of quality. The house philosophy favours transparency: whiskies bottled natural colour and non-chill filtered, letting each cask's true character come through untouched.

Signatory's 100 Proof Exceptional series is reserved for releases that go beyond the standard 100 Proof range in age and complexity — bottled, as the name suggests, at the classic 100 UK Proof, 57.1% ABV. This particular release was distilled in 2008 at an undisclosed Speyside distillery and matured a full eighteen years in first-fill Oloroso sherry butts before bottling in 2026, non-chill filtered and natural colour throughout.
TASTING NOTES
Colour: Deep mahogany, dark from nearly two decades of active sherry wood.
Nose: Raisin and dark berry lead, with orange peel, toasted almond and dark chocolate underneath, warmed by baking spice.
Palate: Rich and full, sherry sweetness meeting nutty, chocolatey depth and warming oak spice, with a firm, malty Speyside backbone showing through beneath the cask.
Finish: Long and weighty, dried fruit and spice lingering, the high strength giving real concentration throughout.
Serve: Neat, in a Glencairn glass — this has the intensity to take a few drops of water if you want to open it further, but plenty of balance to enjoy exactly as bottled.
