The Distillery: Nc'nean
Nc'nean is Scotland's quiet insurgent — founded in 2017 by Annabel Thomas, a former Bain & Co. consultant with no whisky background, on a remote stretch of the Morvern peninsula on Scotland's west coast. Everything about it was built to challenge convention: 100% organic Scottish barley, a distillery powered on renewables, and an explicit ambition to become the most sustainable whisky producer in the country. It succeeded — Nc'nean was Scotland's first carbon-neutral distillery and holds B Corp certification, a rare distinction in an industry not known for moving fast on either front.
That same experimental streak runs through the whisky itself. Rather than leaning on one house recipe, Nc'nean treats cask selection almost as an ongoing study — first-fill bourbon, STR red wine, ex-cognac, ex-tequila, each explored on its own terms rather than folded quietly into a blend.
 
The Whisky: Aon 19-420
Aon — Gaelic for "one" — is Nc'nean's single cask series: individual casks bottled exactly as they are, unrepeatable by nature. This particular release was laid down in a first-fill bourbon cask in August 2019 and left to mature for nearly seven years before being bottled this May, at cask strength — 54.2%, natural colour, non-chill filtered. Just 257 bottles were drawn from the cask.
It's also a release with a specific purpose behind it: bottled as a thank you to the UK's independent whisky retailers, the shops that have backed Nc'nean since its earliest days. A first-fill bourbon cask left this long shows the distillery's spirit in its purest, least ornamented form — no finishing cask, no secondary influence, just seven years of quiet conversation between new-make and American oak.
Tasting Notes
Colour: Pale gold, true to a bourbon-only maturation.
Nose: Ripe, juicy peach leads, with a creamy waft of banana milkshake and warm, freshly buttered bread underneath — genuinely moreish, and a little indulgent for a whisky this pale.
Palate: Full and creamy on arrival, the same stone fruit carrying through alongside a bright citrus lift, the bourbon oak lending warmth and structure without ever crowding out the fruit.
Finish: Warming and lingering, the peach and soft vanilla sweetness the last things to fade.
Serve: Neat or with a single drop of water to fully open the fruit — this is Nc'nean's house style distilled to its clearest expression, so there's little reason to dilute it further. Worth pouring for anyone who's only tried the core Organic Single Malt and wants to see what the same distillery character looks like at cask strength.
