Mezcal San Cosme Astesano IV

Produced in the heart of Oaxaca, San Cosme is rooted in a deep respect for traditional mezcal culture while embracing a contemporary, design-led identity. The Artesano range represents the most meticulous and small-scale expression of their craft—created in close collaboration with independent maestro mezcaleros who preserve generations-old techniques.
Unlike the core San Cosme line, which is designed for approachability and consistency, Artesano is defined by its limited production, terroir specificity, and artisanal precision. Each release is made in extremely small batches, often from carefully selected agave plants harvested at full maturity, allowing for a more complex and expressive spirit.
The production follows classic, labour-intensive methods:
Agave roasting in underground earthen pits lined with volcanic stone, imparting nuanced, integrated smoke rather than overt intensity
Natural fermentation in open wooden vats, relying on ambient yeasts unique to the local environment
Distillation in small copper or clay stills, enhancing texture, depth, and individuality from batch to batch
What distinguishes Artesano IV in particular is its heightened focus on structure and purity. The cut points during distillation are handled with exceptional care, resulting in a spirit that is both refined and deeply characterful. Compared to the standard expressions, it offers greater clarity of agave, more layered aromatics, and a longer, more contemplative finish.

TASTING NOTES
Very floral, with lovely, fresh agave and grass notes. An elegant, aromatic expression on the nose, with lactic notes on the palate combining with meaty notes, sweet spice and candy to give a strong, robust spirit which is beautifully balanced, displaying clear agave flavours.
