Clairin comes from Haiti and is made from wild sugar cane juice. This is then fermented using indigenous yeasts and then added to a pot-still. Clairin is a funky and rustic spirit with herbacious notes, similar to some rhum agricoles.
Distillery Casimir was founded in 1979 and is considered the best distiller in the region of Barradères. The 50 ha plantation is intercropped with bananas, palms and lime.
It is unique to the area to add herbs or vegetable matter to the cane juice during fermentation to enhance flavours & aromas. Casimir adds citronella leaves, cinnamon, and in some batches, ginger.
