Clairin Sajous

Clairin comes from Haiti and is made from wild sugar cane juice. This is then fermented using indigenous yeasts and then added to a pot-still. Clairin is a funky and rustic spirit with herbacious notes, similar to some rhum agricoles.
 
Sajous is the family name of this producer, and they have been making Clairin in the same way since 1960.
