In modern whisky production, most barley varieties are similar to one another, and are selected more for their yield than their flavor. In short, there is little genetic variation, and therefore little variation in aroma. 
To obtain more intense and expressive barley aromas, we need to go back in time. Goldthorpe is a variety discovered in Yorkshire in 1889 - over a century ago - before being introduced to Ireland. It is a tall-stemmed, wide-spaced variety that was extensively field-tested in Ireland in the first decade of the 1900s.
Waterford, in collaboration with the Department of Agriculture and maltsters over a number of years, increased production of this century-old barley from a single small seed packet to have enough to create Waterford Heritage Goldthorpe whisky - a total of 162 casks / 6500 bottles worldwide for this limited edition. 
This is a true rarity in the whisky world. This is the only bottle of single malt whisky produced 100% from the Goldthorpe variety. It's a taste of a bygone era, of an Arcadian approach to farming. It's an extremely expressive, naturally flavorful Waterford whisky.

 

APPEARANCE Sunkissed amber hue with legs that likes like pause has been pressed on the rich viscosity.

NOSE Green vegetation, rich granola bar, berry compote, red apple, green tea, bell peppers, melon, roast beef gravy, prunes.

PALATE Sweet orchard fruits, apples and pears, creamy, light spices, red berries, honey, hay dust, cloves, raising, dry barnyard.
