THE DISTILLERY
Shinobu is made at Niigata Beer Co., on Japan’s western coast — a region famed locally for its “Three White Treasures”: snow, rice, and sake, all products of the same pure mountain water that runs through the whisky itself. The distillery is the creation of Ken Usami, an experienced craft brewer and whisky enthusiast who, in 2017, obtained Niigata prefecture’s first-ever whisky licence, turning decades of hands-on brewing experience toward a new ambition: a Japanese whisky built to showcase the quality of the region’s water on the world stage.
 
The name Shinobu — meaning endurance, perseverance, forbearance — speaks to the house philosophy directly: careful selection of quality whisky stocks, patiently married and finished, rather than rushed to market. The signature move across the range is a finish in Mizunara, the rare Japanese oak prized for the incense-like, sandalwood complexity it lends to whisky, used in Japan since the 1930s and now sought after by distillers worldwide.
 
THE WHISKY: 進化6.5 (EVOLUTION 6.5)
This bottling belongs to Shinobu’s run of Taiwan-exclusive limited-edition art labels — the same tradition that’s previously seen the distillery collaborate with the boxing manga Hajime no Ippo. Here the artwork leans into Japanese motorsport and rally culture instead: a hand-illustrated red rally car mid-drift across a dirt stage, tyre stacks and checkpoint markers in the background, and the kanji for “忍” (nin, the “shinobu”/perseverance character) stamped on the car door — a playful nod to the brand’s own name and to Japan’s JDM drift culture.
 
Underneath the artwork, it’s the same Pure Malt Mizunara Oak Finish that anchors Shinobu’s core range: whisky stocks first matured in a combination of sherry and bourbon casks, then finished in precious Japanese Mizunara oak, bottled at 43% with no added colouring. As with the rest of Shinobu’s Taiwan-exclusive editions, this release is capped at a limited bottle count, sold only through the distillery’s Taiwan importer.
 
TASTING NOTES
Nose: Candied orange peel and toffee, with a whisper of sweet smoke and toasted hazelnut.
Palate: Smooth and rounded, gentle spice and stone fruit sweetness carried by the distinctive incense-like character of Mizunara oak.
Finish: Medium length, warm and woody, with a soft, lingering sweetness.
Serve: Neat, in a tulip glass, to let the Mizunara character fully unfold — or in a highball if you want something lighter and more sessionable. A fun bottle to display given the artwork; worth leading with the label story as much as the liquid for this one.
