Clairin comes from Haiti and is made from wild sugar cane juice. This is then fermented using indigenous yeasts and then added to a pot-still. Clairin is a funky and rustic spirit with herbacious notes, similar to some rhum agricoles.
Originating from Cabaret, a village located in the north-west of Port-au-Prince, this spirit is elegant, with cut grass, basil and lemongrass mingled with tropical fruit notes, ginger, sweet pepper and liquorice.
Clairin Sonson is best enjoyed neat or over ice but also lends itself well to a wide range of classic rum cocktails.
